Easter Salad (or anytime)

My daughter has decided to not eat meat and my husband and I cut red meat from our diet so I was forced to make changes. My cooking has changed dramatically from the beef and potato meals I use to prepare. I have had to step up my game and look for new ideas. So my first recipe is simple, bright, fresh and delicious.  I saw a morning TV show and the guest chef suggested making a similar dish for Easter, so we did.  My husband and I boiled the potatoes in advance so they were served cold. We blanched the green beans (quick boil), roasted the peppers in the oven and threw the salad together right before brunch, it was so good!  

Boiled red potatoes
Roasted red, yellow and green peppers
Blanched green beans
Romaine lettuce – torn into bite size pieces
Crumbled feta cheese
Salt and Pepper
Your favorite Italian or balsamic vinegar dressing
Toss and enjoy!
